When my husband and I were dating (okay ONE of the times we were dating) he lived in the Fremont neighborhood of Seattle. Fremont is known for there summer outdoor movie nights. They show old and new favorites on a large brick wall in the neighborhood, and it’s always a favorite spot. I’ll admit, we never actually made it to one. For shame. But we’ve decided to start our own tradition with movie nights in our back yard, armed with our favorite fruit drink and delicious snack.

Except we don’t exactly have a large brick wall. Heck, I don’t even have a screen. Or a movie projector. So movies on the laptop will have to do. I think I’m adding a projector to my wish list though! Maybe I’ll surprise my husband and get one for the Fourth of July!

We’ve been enjoying the watermelon basil lime mocktail we made earlier this summer while we’ve been watching movies, but we thought we’d take our favorite beverage a step further and make a snack to go with our mocktail. So what about some Kool-Aid popcorn?

I headed to Walmart to pick up some more of those fabulous 96oz bottles of Kool-Aid for more mocktails, I picked up the supplies for popcorn. Get this – all I needed was a single packet and some other ingredients to get a fun color!

Kool-Aid popcorn is really easy to make, shockingly easy. Colored popcorn is lots of fun for movie night, parties, and of course, the Fourth of July.

Easy Kool-Aid Popcorn

Ingredients
about 12 cups of popcorn (this is about 2 of those microwave bags)
1 cup sugar
1/2 cup light corn syrup
1/3 cup butter
1 packet KOOL-AID Unsweetened Drink Mix, any flavor
1/2 tsp. baking soda

Directions
Preheat oven to 225ºF.

Spread your popped popcorn into a largish roasting pan.

BRING sugar, corn syrup and butter to boil in medium saucepan on medium-high heat; cook 2-3 min., stirring often so it doesn’t scorch. Remove from heat. Add Kool-Aid drink mix and baking soda; mix well. Pour over popcorn; stir gently to evenly coat popcorn coat evenly.

BAKE 10 min. Carefully stir popcorn to make sure it’s well coated. Repeat this step 3 more times for a total baking time of 40 min.

COOL your coated popcorn on a large cookie sheet covered in waxed paper. Break up in pieces and enjoy!

Side note… I did try and make blue popcorn too, but it looked a little more St. Patrick’s Day green. Oops! Back to the drawing board. We also made another mocktail with Fruit Punch, club soda and fresh berries. MMM!
