One of my favorite springtime things to eat is egg salad. This wasn't always the case, as I used to loathe mayonnaise. In all fairness, I still do if it's overused. But this simple egg salad recipe is a real winner, and I normally have everything I need to make it in my kitchen.
Simple Egg Salad Recipe
Ingredients
6 eggs
1 tablespoon mayonnaise
2 tablespoons spicy brown mustard
1 teaspoon dried dill weed
1 teaspoon paprika
salt and pepper to taste
Directions
Place eggs in a saucepan and cover with cold water. Bring water to a boil.
Remove from heat and cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, salt and pepper. Mash well with a fork.
Serve on your favorite bread, or with lettuce. Don't forget the bread and butter pickles!
