My son's school had a potluck tonight. We're talking a bunch of preschoolers here, so my typical potluck dish (artichoke spinach dip) probably wouldn't have worked. So I decided to make Rice Krispie SUSHI treats!
I wanted something really easy that had kid appeal. Not so long ago, one of my PR contacts had sent me a few boxes of Stretch Island FruitaBu, along with a cute recipe to make "sushi" with Rice Krispie treats, using the fruit leather as the Nori and swedish fish and other candies for decoration.
FruitaBu rolls are a preferred treat in our house. No weird colors or dyes, delicious flavors and a full serving of fruit in each roll. My son can't get enough of them. If it weren't for me adding them to the rice krispie treats, we'd have a nearly perfect healthy snack!
I was even dorky enough to "roll" some rice krispie treats around some swedish fish, chill, and slice. Yeah, that's how I roll. LOL.
INGREDIENTS:
6 cups rice cereal
4 cups miniature marshmallows
4 tablespoon butter
2 boxes of FruitaBü Fruit Rolls
A variety of candy: cherry twists (such as Twizzlers), gummy worms, licorice and Swedish fish
DIRECTIONS: In a small saucepan, melt the marshmallows with the butter over low heat. Add the rice cereal and stir to coat. Pour the mixture into a greased pan while it’s still warm and cut the treats into small rectangles. Create different rolls, nigiri, or sushi using the candy pieces, and wrap each piece with FruitaBü Fruit Rolls for the effect of seaweed. Arrange on a plate with a bit of green frosting for wasabi and pieces of candied ginger for a real looking presentation!
Needless to say, the fruit sushi was a real hit! I no sooner set the plate down, when 3-4 kids reached in and grabbed a piece! It's going to be my go-to treat for kid friendly potlucks! Next time though, I am going to use other candies - worms, sour candies etc for more variety.
Also, it's really easy to make this recipe much more dietary friendly, gluten free Rice Krispies are available, and I can use candies that don't include artificial food dyes. Pretty cool for a kid who can't enjoy the regular cakes and cookies at parties!
