With the rogue snow this morning, I wanted an easy dinner that I could make that would warm us up and we could enjoy leftovers. Easy one pot chili was a no brainer, and with the exception of the ground beef, I already had everything on hand. With the exception of the spices and olive oil, I used all organic ingredients, but you certainly don't have to.
I have an amazing stainless steel stock pot that I love for chilis and soups, and it was perfect for this recipe.
Easy One Pot Chili
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 pound ground beef
3 (15 ounce) cans black beans, undrained
1 (14.5 ounce) can diced tomatoes
1 ½ tablespoons chili powder
1 tablespoon red wine vinegar
salt and pepper to taste
In a heavy stock pot, heat oil over medium heat; cook onion and garlic until onions are translucent. Add ground beef to onion and garlic mixture and cook, stirring, until meat is brown. (Do not drain) Stir in black beans and their liquid, diced -tomatoes, chili powder, oregano, basil and vinegar. Reduce heat to low, cover and simmer for at least 60 minutes.
Garnish with sour cream and shredded cheese. Serve with cornbread.
