I’m super fortunate to live in an area of the country that really supports local farms – a good thing – we’re surrounded by them – and I love being able to get local, organic foods for my family. Since we live in a world inundated with chemicals, it’s important to me.

I love apples. Love them. Some of my childhood I even lived next to an apple orchard. In fact, my LAST NAME means “apple orchard” See where I am going here?

I was able to pick up two boxes of golden delicious and honeycrisp apples from Portage Bay Grange, the same place I buy feed for my backyard chickens. Perfect!

After I picked up my boxes of apples, the question was, what to do with them? My son answered that question by helping himself to a honeycrisp apple within minutes of bring them home.

So far we’ve enjoyed apple slices with peanut butter, apple oatmeal crisp and apple pancakes. Next up is my first attempt at canning – apple sauce. (If it’s a success, I will share my experience!) The backyard chickens have been in HEAVEN with all the cores and scraps. Such happy chickens!

Apple pancakes are super easy to make and delicious for any meal. I won’t tell anyone if you decide to have these for dinner. I promise. All ingredients are organic, but you can make them with non organic ingredients, they just might not be as delicious.

Organic Apple Pancake Recipe

Makes about 16 medium size pancakes

Ingredients
1 1/2 cups milk
2 cups all-purpose flour
4 tablespoons white sugar
2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tsp cinnamon
2 eggs
4 tablespoons butter, melted
3-4 apples chopped into smallish pieces, cores and skins removed

Directions

Place a clean cookie sheet in the oven and preheat it to 200. This will serve as your warming tray for your pancakes after you’ve cooked them.

Combine flour, sugar, baking powder, baking soda, salt and cinnamon in a large mixing bowl.

Whisk egg and butter into milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

Add in apples and mix well. It will seem very apple heavy, but I promise, it will work!

Heat a large skillet over medium heat, and coat with cooking spray or melt butter in it (I prefer butter). Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Put the cooked pancakes on the cookie sheet you previously placed in the oven to keep the warm while you finish the batch.

Serve with butter – you really don’t need any maple syrup – there is lots of delicious sweetness from the apples!

    I’m going to have to try out this recipe. We just went over to a friend’s last night who was manning his kitchen for a large group of friends. He was making homemade blueberry oatmeal pancakes, banana pancakes, waffles, and bacon to celebrate Shrove Tuesday.

    it got me in the pancake mood to try out new recipes. I’ll have to replace the white flour with white wheat flour though. Trying to cut down on the ‘white’ foods.

    This sounds so yummy I would have never thought about warming the cookie tray to keep the cooked pancakes warm. I always hated to put them on a plate because we would all end up eating at different times if we wanted hot pancakes. Thanks for the tip and the recipe.

    It must feel good to be able to grow the apples and use them for organic recipes. I think my kids would love these and I would to. I’d really like to try it. My mom used to make up apple pancakes when I was a kid.
