You’ve had kefir right? You know it’s a good source of probiotics. If you’re a fan, you’ve probably had it straight up or in a smoothie. Maybe if you’re a little adventurous you’ve had it in a dessert. But what about a kefir curry?

It makes sense right? Kefir originated in Eastern Europe over 2000 years ago, kefir’s probiotic cultures have long been enhancing feelings of well-being. Seems like kefir and curry go hand in hand.

The other day I picked up some Lifeway Kefir after seeing some great curry recipes – I decided to make my own kefir curry. It has a wonderfully smooth and tart flavor, which is a perfect accompaniment to my favorite Indian and Thai spices.

About once or twice a week, we like to share dinner with our neighbor Spencer. We’ve been known to share a pizza, grill some chicken or enjoy a root beer ice cream bar. But sometimes, like tonight, we kick it up a notch and try something new. I’m happy to say, this kefir curry was a hit.

I’ll give you a heads up, this is more of a broth than a sauce. It’s thin yet extremely flavorful. By experimenting with the quantity of different ingredients you could give it a great kick. I imagine the broth would be AH-mazing as a soup base (I’m totally going to try it by the way).

Grilled Cod with Lime and Lemongrass Kefir Curry Sauce

Ingredients
1 tablespoon butter
2 shallots, thinly sliced
3 garlic cloves, thinly sliced
1 lemongrass stalk, thinly sliced
1-inch knob ginger, thinly sliced
1 tablespoon Garam Masala
1 tablespoon ground cumin
3 cups chicken broth
1 1/2 cups kefir
4 cilantro sprigs
Fine sea salt to taste
Freshly ground white pepper to taste
1 tablespoon fresh lime juice (cut a lime into wedges)

4 cod filets
olive oil
fine seat salt to taste
fresh ground white pepper to taste

To make the kefir curry sauce, melt the butter in a small sauce pan over medium heat. Add the shallots, garlic, lemongrass, ginger, garam masala and cumin and sweat until tender and with no color. This takes about 5 to 6 minutes. Add the chicken broth and bring to a boil. Lower the heat simmer for 15 minutes. Add the kefir and cilantro, and simmer for about 5 more minutes. Add salt and pepper to taste, strain and set aside.

Preheat your grill.

Lightly drizzle both sides of your cod fillets with oil oil and dust with salt and pepper.

Grill on foil on low heat for about 6 minutes per side, or until fish flakes with a fork.

Serve fish over greens or rice, dress with kefir curry sauce, drizzle with fresh lime juice.

    This sounds awesome! My husband is on a med that requires him to take probiotics in some form, and since we’ve moved back to the US (where the options are less) I’ve got him hooked on Lifeway Kefir. I never thought of cooking with it!
