I love rice pudding. I used to love eat leftover rice mixed with a bit of milk, raisins and sugar for a treat after dinner. Ok, so that’s not exactly rice pudding, but it’s close enough right? 1/4-1/3 cup Almond Coconut Milk
1-2 tbsp dried cranberries
1 tbsp maple syrup for sweetness (if desired)
Prepare Minute® Ready to Serve Rice according to directions. Add Almond Coconut Milk to desired consistency. Combine cranberries and maple syrup if desired (this depends usually on how sweet your coconut milk is, and if you want a more dessert like dish) ENJOY IMMEDIATELY.
Substitution ideas include different dried fruits such as raisins, cherries. You could also include dates or nuts for a nice texture and flavor. The possibilities are endless.
